Lol, I actually smile a lot, but that dp is the only one I had where it doesn't give too much away of my identity
 
I bbqued myself a steak and had salad and potato with it. My favourite meal :) Made snags and veggies with gravy for my favourite person :)

Hey how did your Bearnaise sauce work out the other night?

It was pretty good. I used the blender technique and it works!

The vinegar and wine with the herbs simmered in a saucepan, while in the blender was the egg holds and melted butter. Just combine the wine stuff to the blender and done. It tasted the same too.
 
HM1 is making me potato crumbed chicken tonight! Can't wait, damn sight better than the crisps, yoghurt and mince pies I had last night. We're so bad, as soon as one of us goes home for the night out eating habits just die. HM2 and I are damn lazy in that kitchen when HM1 isn't around to whip us into shape. Doesn't help that I'm fussy as all heck.
 
...my rabbit tasted fantastic!... I guess that nobody had any rabbit recipes so as they say...'Google is your friend'... I googled some recipes and settled on this one from this website... it didn't take too long to cook either... I'll definitely buy another rabbit in probably a months time and cook it again... rabbit is so tasty!... I'm still up for anyone else's tried and tasted rabbit recipes if anyone cares to share them with me... cheers.

Rabbit in Red Wine

Rabbit, or fenek, is almost a national dish in Malta—so much so, the Maltese coined a new word for those dining on rabbit: fenkata. For a crispy outside and moist interior, brown the rabbit quickly, then finish cooking the dish in the oven.


SERVES 4

INGREDIENTS:
1 2-lb. (1 kilo) rabbit, cut into 6 pieces
5 tbsp. extra-virgin olive oil
6–8 cloves garlic, peeled and minced
4 scallions (spring onions), white part only, finely chopped
Leaves from 3 sprigs each mint, thyme, marjoram, and parsley, chopped
1 cup red wine

INSTRUCTIONS:
1. Preheat oven to 350°. Brown rabbit pieces in 4 tbsp. of the oil in a large skillet over medium-high heat, turning frequently. Remove rabbit; pour off fat; lower heat to medium.

2. Add remaining 1 tbsp. oil and cook garlic, scallions, and all but a bit of the herbs for about 3 minutes. Deglaze skillet with wine and return rabbit to it. Place skillet in oven and cook uncovered till meat is firm, about 25 minutes. Serve garnished with remaining herbs.
 
I asked my dad for you [MENTION=30464]Mr Stickyfingers[/MENTION] because he once made a surprisingly delicious rabbit pie, but he couldn't remember the recipe. However your recipe sounds amazing. I used to have pet bunnies when I was little but I still love the taste of rabbit meat.
 
Tonight I attempted a seafood long soup... Was ok. I think I need to work at the broth a bit.

You sound dangerously like me in this regard. I really need a HM1 to whip me into shape. I do have a HM in the form of my sister, but she knows I will almost never eat what she cooks, if you can call it cooking since her diet is 80% raw.

My dinner tonight was mexican. So much mexican. Washed down with several margaritas and coronas. Mmmm.
 
I was really bad tonight and had pancakes for dinner.


Just about to make pancakes for lunch. Repeating a deluxe version I made recently, yummy.
Usual SR flour, sugar, egg, milk - plus a blob of sour cream, blob of yoghurt, some custard powder, extra egg, dash of real vanilla.

They were light and fluffy, and delish - with a little icing sugar sprinkled over whipped butter for me, maple syrup/ice cream the rest.

Buttermilk makes them fluffy if you have it, or sour cream (didn't have much, so I chuck in greek yoghurt to almost everything that has flour these days).

I'm going to make this version, sounds excitingly different. Did you hand beat all the ingredients or some pasts yes and other parts just lightly mix?

I don't use buttermilk, despite it's better in pancakes. For one, I don't use it often enough so it will be a waste unless making pancakes and therefore, two, waste of money for me. But since sour cream can be used, I am glad. The yoghurt thing is so strange I admit

Pancakes are one if the easiest things to do, I honestly don't understand why anyone would want to buy the pre made stuff.

Your lunch- I like spinach a lot actually. Not so much the brown rice part. But I'm just not a rice person in general. I made baked drumstick with balsamic and olive oil and some fresh oregano marination. On the side with a bruschetta kind of salad. Mmmm

And whilst I have been wasting time, ooo another good pancake method to make them extra yummy - just stumbled over one with separated eggs, whites whipped.
That would make them so light and fluffy.

Method query - easy, chuck everything dry in a bowl, make a well in centre, chuck everything wet in. Mix with wooden spoon until blended.

If you want to get fancy sift things, I never do.
My yoghurt thing - started with recipes for making cake mixes using yoghurt & melted butter, donna hay - so damn easy and yummo.

So I make cakes & muffins with yoghurt, awesome and easy.
And I'm just a tad addicted to greek yoghurt & to apricot danishes, and coriander - goes with everything savoury.

Hey! It was the first thing I learnt to cook as well. One egg, one cup self raising flour, one cup milk, vanilla extract, a little bit of sugar, a tablespoon butter and mix. These days I get more creative though, a bit of cornflour in there with some blueberry sometimes or a banana. I like cheap foods, they are becoming the forgotten food at times.

I'm going to start incorporating yoghurt into my dishes, it sounds like a healthier option but also because I always over make home made yoghurt and it's a good way to get use out of it

She is very good. My little kitchen cop. I actually love to cook, I just can't be bothered when it's only me. Fussy old me is just as happy to eat a bowl of porridge for dinner as I am a steak. I'm super picky and if I don't like it I'm quite happy to go without. Unless I'm cooking for everyone food is a chore, and even when everyone is around, if I'm not in the mood I go quick and easy (and more often than not bland). Raw? I don't think I could do that. Especially on the vegetables front, I'm bad enough already as it is. When I get lazy I can go for a long time before I realise all I've eaten in days is cereal and fruit.

Tonight is a bad night, pretty sure we're doing sausages and potato gems. So lazy. I wish I were having Mexican and margaritas. One of my favourite things to eat and cook is chilli con carne with corn bread. Soooo yummy.

......rabbit pie sounds delicious to me... thanks for taking the time out to ask your dad for the recipe for me jessy_girl... much appreciated... that recipe was so good... I had it for dinner 2 nights in a row... it was just as good the second night as it was the first... my stepson had a piece and loved it too!... he'd forgotten just how good rabbit tasted too... he hadn't eaten it for about 10 years or so like me... again jessy_girl... thanks for asking... cheers.
 
I've never had rabbit, wouldn't mind trying it if I can find some.

Hey, has anyone tried those pink pumpkins they have in Coles? I bought one yesterday to try it, was a little tough around the skin, not sure if I just got an older one? The flesh was nice enough.
