What's for dinner?

I have a food query...................does anyone know if you can turn the fat on your Christmas ham into crackling like pork???
Treating it the same way, salting, dry, baking it on it's own?

For we cut it off and throw it away, before dressing the ham up and baking it
 
OMG my dinner was orgasmic... Fish à la Meunière sort of
Fresh gummy shark cooked in lemon and butter, with lettuce, coriander, tomato, lemon juice and a dash of good mayo
I would eat this every night now if I can, well market is only open 4 days. Corainder, lemon and fish are yummo together.
