What's for dinner?

I forgot we had to attend creepy School Carols. Some of the songs selected, were really weird.

As we got home late,the rest of the family had Pizza. I had scrambled eggs. Tomorrow night though, having Sweetgeek's Morrocan Chicken Salad and I have the tenderloins marinating overnight for that.:)
 
I made this up myself , experimented and it turned out great.

Spinach , leek and bacon crustless quiche.
And I used Greek yoghurt instead of cream/milk

1 leek
1 Clove garlic
1 cup bacon pieces
1/2 cup spinach
5 eggs
1/2 cup Greek yoghurt
1/2 cup grated cheese
Salt and pepper
1 tbs butter (or coconut oil)
1/2 tomato

Preheat oven on 170c and grease pie dish (I use a square casserole)

Slice and dice leek, garlic and sautée with a small dob of butter, add bacon and spinach and cook for a few minutes. Turn off heat

Combine eggs, yoghurt, cheese and salt and pepper .. Mix well

Put warm mixture in dish then pour in egg mixture .

Cut tomatoes into 6 thin slices, put between two pieces of paper towel to absorb juice. Then place on top of quiche mixture
Cook for 30 minutes at 170 in fan forced oven

Stand for 5 mins , slice and serve with garden salad

Squeeze of Lemon juice
Bit of lemon rind
Put uncooked prawns in and toss for a few mins until cooked and then right at the end stir 2 tablespoons of cream in.
 
Had lunch at my hairdressers after she did my hairs. Homemade chicken mini sausage rolls. Dinner was roast lamb and vegies at my besties. I also had three coffees today. No wonder I had a headache this afternoon. Tomorrow if I have one it will need to be black. Too much milk today.

Tonight, I am making Hoisin Chicken Wraps. I have a lot of other cooking to do today, so it's an easy go to as the chicken strips can marinate in the fridge for a good few hours, then just before it's popped on to cook, I can julienne some carrot, cucumber and bamboo shoots, chop some water chestnuts, chuck a handful or two of bean sprouts on a plate too, serve with some asian pancake and DONE!

As dinner was light last night, I thought I would make a nice dessert. Decided on Afogatto made with home made boozy hazelnut icecream as the host, and topped with a choc hazelnut tuiles.:)

I started making something for dinner, but it seems we have a collective hankering for Indian Takeaway so dinner is in the bag and about 15 mins away.

I started making something for dinner, but it seems we have a collective hankering for Indian Takeaway so dinner is in the bag and about 15 mins away.
I have a hankering for curry now. Might have to get some during the week when I'm on earlier shifts.
 
my son asked for meatloaf today, so meatloaf it shall be!

I finished, so all that's left to do is bake it before hubby gets home, which I will do later on this afternoon.

I'll also be making a banana and walnut cake because I have bananas that are just too ripe to eat as they are. @Kismet I'll be using your recipe again for this :) It has become a household favourite. This time I have the walnuts to add to it
 
@Sweetgeek I am glad you guys like it.:thumbsup: I have made them before in single size cups and they go down a treat and un-frosted, great in a school lunch box and IF, frosted good for a Morning or Afternoon tea. Below are pics to the same batch, some frosted and some not.

Tonight for dinner, I am making buttermilk soaked crispy baked chicken fillets with some garlic mash and corn cobs. Maybe some broad beans as I feel like beans. *shrug*
