That know how to use stuff you can source that means you don't have to make everything and can whip stuff up for dinner

Hear hear! When I was doing my restaurant management course I was a real cunning stunt. I would offer to make the sauces if anyone would chop my brunoise. Now Gina you can often rescue a hollandaiseby adding a little bit of cold water, but it may have gone too far.
