He was apprenticing at some place in Perth. Farm and something??? Then he was going on 9 month motorcycle trip to gather recipes. (No I'm not making a joke he really is!)

Aw, quite glad Ray pulled out a good dessert tonight.
Tamara's talking heads are working my last nerve. So damn vivacious.
It was Tamara butting in as he was taking it out that caused Ray to drop his whatever it was sorbet? something and that landed him in his first elimination ep. She's a serial run up to the fridge butter in-er, did it to someone else, with less disastrous results as they recovered, a few eps later (reminds me of that women who kept accidentally stealing someone else's resting dough one year) . I hope Ray now recovers his confidence. He's a bit slow and muddled and hard to watch, but he has a good heart.
