Umm...personally, I think pork and apple sauce is overrated. I used to cook pork fillets and plums or apricots or pears...I thought it was much nicer. But I get that some people don't like protein and fruit.Hmm, I'll take your word for it.
I remember Sunday lunch sometimes involved pork and Apple sauce when I was a kid. I didn't eat it.

Are you sure he escaped? Country folk sometimes have interesting stories to tell when animals suddenly disappear...like my hubby's dogs all went to live with Uncle Ned (he shot them!) the cattle all went to live on other farms and drank strawberry milkshakes! Haha!Those poor yabbies.
I haven't eaten rabbit in my adult life, and hate the idea.

When we lived in the country he would go rabbiting and cook some, so I had to eat it then
Usually the trap would break the rabbit's legs ( sad face ), but one time a baby rabbit was uninjured, so we kept him.
Dad built him a hutch, and called him Starsky, of course.
We never ate him - he escaped one day.
