This would be my favourite challenge. I have nearly all ingredients at home. When my kitchen was being renovated, the really lovely guy looked at my then pantry and said that I wasn't suitable for the double sided slide out shelves. I have really strong slide out drawers. Perfect except they are chokkas

I thought it was cooking it in fat or oil on a low temperature.

One of my girlfriends went to an Italian night they did 2 years ago, she teaches italian, she loved it, loved meeting Matt.
George has a take away in my burb, I could give it to his staff

Am I confused about what confit is?

Confit is usually food cooked slowly in an oil bath, eg duck confit or salmon confit. Mmm mango confit, not a fabulous idea methinks.
