I'm lazy, I dont use pastry, I use those individual vol-au-vent cases/shells. I pre-heat the oven to 180, then paint the inside of the vol-au-vents with eggwash, then I cook the shells for about 5 minutes, to seal them. I learned from experience that if you dont coat the inside with eggwash and set it, they can be porous and tend to leak. Then I’ll put some diced ham, pineapple and onions in them and fill them with the egg, cream and milk mixture. I check them at about the 15-20 minutes mark and keep an eye on them, until they are cooked. Pre cook the diced onions in the microwave for a couple of minutes, if you want to. I also put a piece of baking paper on my flat cooking tray, just in case one of them still leaks. These:
