I was wondering if it meant my favourite recipe to cook, or to eat. I opted for a hybrid. It's a cake. The ONLY cake I can actually cook well..lol and it's easy and yummy. (I am not a person who eats cake)
Orange Poppy Seed Cake.
Ingredients:
- 1 LARGE orange roughly chopped if small, 2-3.
- 185 gms butter melted -(or 3/4 cup veg. oil)
- 3 egg - (or a cup of apple sauce)
- 1 cup caster sugar
- 1 1/2 cups self-raising flour
- 2 tbs poppy seeds
- Tspn Vanilla extract (or the seeds from a Vanilla bean)
Method:
- Preheat oven to 170C.
- Grease and line an 18 cm cake pan or a loaf tin.
- Puree whole orange in food processor.
- Add melted butter, eggs, sugar and vanilla and mix well.
- Add the wet mixture to flour and poppy seeds and mix until well combined.
- Pop in your chosen baking vessel
- Bake for approximately 45 minutes or until cooked when tested.
Important note. Keep the skin on the oranges.
I usually make it in a Bundt Pan, but you can do it in any pan you like. Occasionally I have made it into cupcake size and frosted them with cream cheese frosting.
